Best Popsicle Molds

In addition to the ingredients needed to make these homemade lemon popsicles, you will also need a popsicle mold and popsicle sticks. If you don’t have ice pop molds, you can use paper cups, such as Dixie cups, or even ice cube trays. Here are my top recommendations for popsicle molds. 

Variations + Substitutions

  • Coconut water: If it’s the middle of summer and hot as can be, swapping the water for coconut water can be a great choice. 
  • Berries: Pack in more antioxidants and berry flavor with strawberries, blueberries, or fresh raspberries.
  • Sweetener: I love using maple syrup as a sweetener, but you can definitely use regular white sugar or cane sugar. Dilute it in one cup of hot or warm water first though, for the best results. (The recipe calls for two cups of water, so in this case, do one cup hot or warm to dilute the sugar and then combine it with another cup of cold water. For sugar-free lemonade popsicles, I recommend stevia or monk fruit sugar.
  • Fresh Herbs: Fresh mint is so good paired with the lemon flavor of these popsicles. For a more interesting combo, try some fresh basil!

How To Make Lemon Popsicles

These popsicles come together in a breeze. 

  1. Stir together lemon juice, maple syrup, and water.
  1. Pour into a popsicle tray and add a couple of lemon slices to each mold (optional).
  1. Freeze for at least four hours.

Ingredients 
 

  • 1/2 cup lemon juice, fresh squeezed
  • 2 tablespoons maple syrup
  • 1 1/2 cups water
  • lemon slices, (optional)

Instructions 

  • Stir together lemon juice, maple syrup, and water.
  • Pour into a popsicle tray and add a couple of lemon slices to each mold (optional).
  • Freeze for at least four hours.
  • Serve by running one of the popsicles under warm water to release.

What can I use instead of popsicle molds?
Disposable cups like Dixie cups or an ice cube tray with larger slots can work well. Once they are made and frozen, run the bottom and sides of the container(s) under hot water. This will help the popsicle release from the mold.
