Nutrition For Mental Health
Lemons are an excellent source of vitamin C. They also contain small amounts of potassium, calcium, magnesium, iron, and vitamin B6. Lemons also contain various other plant compounds, including citric acid, antioxidants (hesperidin, diosmin, eriocitrin), and d-limonene.
Did you know that I went to grad school for nutrition and functional medicine? Since then, Raepublic has focused more on how diet can impact mental health! A study found that higher consumption of dietary vitamin C reduces the risk of depressive symptoms among the general population.
Ingredients + Notes
Three simple ingredients (plus water) bring these tasty lemonade popsicles together.

Best Popsicle Molds
In addition to the ingredients needed to make these homemade lemon popsicles, you will also need a popsicle mold and popsicle sticks. If you don’t have ice pop molds, you can use paper cups, such as Dixie cups, or even ice cube trays. Here are my top recommendations for popsicle molds.
- Stainless steel popsicle mold for six regular-sized popsicles.
- Silicone popsicle mold for ten normal-sized popsicles.
Variations + Substitutions
- Coconut water: If it’s the middle of summer and hot as can be, swapping the water for coconut water can be a great choice.
- Berries: Pack in more antioxidants and berry flavor with strawberries, blueberries, or fresh raspberries.
- Sweetener: I love using maple syrup as a sweetener, but you can definitely use regular white sugar or cane sugar. Dilute it in one cup of hot or warm water first though, for the best results. (The recipe calls for two cups of water, so in this case, do one cup hot or warm to dilute the sugar and then combine it with another cup of cold water. For sugar-free lemonade popsicles, I recommend stevia or monk fruit sugar.
- Fresh Herbs: Fresh mint is so good paired with the lemon flavor of these popsicles. For a more interesting combo, try some fresh basil!
How To Make Lemon Popsicles
These popsicles come together in a breeze.
- Stir together lemon juice, maple syrup, and water.

- Pour into a popsicle tray and add a couple of lemon slices to each mold (optional).

- Freeze for at least four hours.

- Serve by running one of the popsicles under warm water to release.

Serving Ideas
Serve these popsicles as a refreshing dessert on a hot day or a cool treat after a workout.
- Salads: A salad goes great with these delicious frozen treats. I recommend this Strawberry Salad With Cucumbers or Melon Ball Salad.
- Entrées: This lemonade popsicles recipe is perfectly paired with Vegan Sloppy Joes or Vegan Black Bean Burgers.
- Drinks: A cold glass of Infused Berry Water or Lemon Strawberry Water are great options.
Storage Tips
Keep your homemade popsicles fresh and frost-free with these storage tips:
- To avoid freezer burn, store them outside the molds in an airtight container that is freezer-safe.
- Store them in the freezer for up to a month.
FAQ
Disposable cups like Dixie cups or an ice cube tray with larger slots can work well. Once they are made and frozen, run the bottom and sides of the container(s) under hot water. This will help the popsicle release from the mold.
Homemade popsicles take at least four hours to freeze.
Homemade popsicles will last in the freezer for about one month.

Great idea, I will try with oranges
This would be great with oranges. You might want to skip the sweetener, though. (Or use less.)
